Busy day in the garden today so I needed a sweet sunday afternoon treat and fast but the cupboard was pretty bare, so here it is….
1. Brown 100g of butter in a pot with the seeds from a vanilla pod (about 7 minutes). Mix 2 tbs four (gluten free in my case) with 1 tin of mango with 1 tin of pears and add all but 1/4 cup of the butter. This is your filling – pop it in a pie tin.
2. Make the crumble from 1 1/2 cups flour, 1 1/2 tsp baking powder, 1 tsp of ginger powder, 1/4 cup brown sugar and the remaining brown butter.
3. Crumble over the filling and bake at 180 degrees celcius for 40 minutes.
4. Sprinkle with icing sugar, lick lips and dig in.
